Recipe: Chocolate Cupcakes with Chocolate Chip Cheesecake Filling
The shift to healthy eating effectively killed off one of my favorite hobbies: baking!
I've become a halfway decent baker over the years. I slowly collected a small goldmine of wonderful recipes that I no longer use because I have no off button and I'm actually fairly certain I could eat an entire cake in one sitting without trying too hard. And this is why, one day, diabetes will kill me.
A lady from my ward hired me to do the cupcakes for her daughter's baby shower this week and it was so fun to bust out my granulated sugar again.
These are some of my all time favorite cupcakes but I have to warn you that if you're looking for something that tastes good straight out of the oven then look elsewhere. These are strangely mediocre fresh from the oven. The magic happens after a couple hours in the fridge.
These don't really need frosting but, for the sake of prettiness, I have topped them with all kinds of different frostings and thus far have loved this one the best. Frost or don't frost. Whatever makes you happy.
Chocolate Cupcakes with Chocolate Chip Cheesecake Filling
Adapted very slightly from All Recipes
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
1 teaspoon salt
2 teaspoons baking soda
2/3 cup vegetable oil
2 cups water
2 tablespoons vinegar
2 teaspoons vanilla extract
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1/4 teaspoon salt
1 cup semisweet chocolate chips (I prefer mini chips but regular works great too)
Preheat oven to 350 degrees. Mix together flour, 2 cups sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 1/2 full.
For the filling, beat together the cream cheese, egg, 1/2 cup sugar and 1/4 teaspoon salt until light and fluffy. Stir in chocolate chips. Drop a heaping teaspoonful of the cream cheese mixture into each cupcake. Bake in the preheated oven for 20-25 minutes. Refrigerate for a few hours before enjoying.
