But now that glorious spring and summer produce is upon us I'm getting back into the swing of things and oh, how I love it! You'll notice a fair amount of repetition throughout the week. Because we try to eat seasonally (and locally produced, as much as possible) we end up eating a lot of the same or very similar dishes. If I were writing this in the winter you'd be seeing a butternut squash and a lot of grapefruit. Fortunately, as soon as I start to get sick one set of fruits and veggies the weather shifts and we get another set.
Also, we're not nearly as strict these days, as you'll see. We eat whole foods as much as possible but don't worry about it if we need to eat quick and easy or want to go out on Friday night.
Wednesday
Breakfast: The boys had cut up watermelon and scrambled eggs with spinach. Aaron and I had watermelon strawberry smoothies. I blended spinach and greek yogurt into mine.
Lunch: Big salad using my bottled lettuce (best. thing. ever), grilled chicken, jicama, carrots and snap peas. My boys ate with my in-laws.
Snack: String cheese, a slice of whole wheat bread with butter
Dinner: My boys had dinner with my in-laws and Aaron ate some leftovers so I made myself some spinach pasta and lightly steamed a bunch of veggies (yellow squash, carrots, green beans, asparagus, red bell pepper) and threw it all together with a smidge of cream, parmesan cheese, salt and pepper.Probably my favorite meal of the week.
Thursday
Breakfast: Watermelon strawberry smoothies for Aaron and I (mine had greek yogurt), pancakes and watermelon for the boys
Snack: Triscuits and string cheese
Lunch: Grilled cheese sandwiches on whole wheat bread with watermelon, carrots and snap peas (I had my veggies on a big salad, again using my vacuum sealed lettuce)

Dinner: Aaron and the boys had the leftover pasta from Wednesday night. I had taco salad at a church function.
Dessert: Aaron bought me apology candy (Reese's, my absolute fav). I couldn't not eat it since that would be like not accepting his apology. I did it for our marriage
Friday
Breakfast: Watermelon strawberry smoothies for Aaron and I (sadly, we were out of yogurt and acceptable smoothie greens so I had mine straight), the boys had watermelon and oatmeal with raisins
Snack: I snuck a Reese's (it had been that kind of morning)
Lunch: I polished off the leftover pasta from Wednesday night. The boys were in a snacky mood that day and filled up on watermelon, Triscuits, string cheese, snap peas and whatever else they could find. I don't normally allow that kind of grazing but eh, it was Friday.
Dinner: Pizza at Grimaldi's. Pesto for me, red sauce and pepperoni for Aaron (the boys picked from both)
Saturday
Breakfast: Pancakes with butter and syrup, watermelon
Lunch: Leftover pizza
Dinner: Chicken curry with naan, green salad
Sunday
Breakfast: watermelon, mango, toast
Lunch: I don't think I ate lunch, actually. Which is really weird for me. Stinky had watermelon, Baby 2 napped right through (church messes with his schedule). None of us seemed to be particularly hungry.
Dinner: At my parents' house - hamburgers on buns made with my whole wheat bread recipe. Fruit salad, green salad, corn on the cob.
Dessert: Chocolate chip cookies in honor of Father's Day
Monday
Breakfast: Toast, watermelon
Lunch: Raspberries, grapes, pasta with tomato basil sauce
Dinner: Leftover pasta, more raspberries and grapes. Aaron and I also had a little bread and smoked gouda
Tuesday
Breakfast: toast, watermelon strawberry smoothies (Baby 2 flopped on my lap and proceeded to drink most of mine. Stinker)
Lunch: Grilled cheese on whole wheat bread, grapes, raspberries, watermelon, carrots
Dinner: Quesadillas on homemade wheat tortillas. The last of the watermelon and veggies that I scraped together from our bare fridge (produce delivery is on Wednesday, so by Monday and Tuesday we're usually struggling!)

Do you have the food saver you need to make the lettuce in the jar? (I'm assuming you do, if that's what you're eating every day). If so, do you use it for other things too? The concept is definitely appeal to me.
