Recipe: Oatmeal Chocolate Chip Cookie Bars

Pretty sure this is the only thing on the menu today (thus far it's been breakfast AND lunch. Fortunately, my parents are feeding us dinner otherwise it would probably be more cookie bars for me). But it's ok because I'm trying Zumba tomorrow.


Oatmeal Chocolate Chip Cookie Bars
Adapted slightly from Mel's Kitchen Cafe

1 3/4 cup flour (I did half whole wheat this time and they were still amazing)
3/4 tsp baking soda
1 tsp salt
1 cup oatmeal
3/4 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
10 ounces semi sweet chocolate chips*
Preheat oven to 375. Whisk together dry ingredients and set aside. Beat butter, sugars, egg and vanilla till light colored and fluffy. Stir in dry ingredients until just incorporated. Stir in chocolate chips. Press into a greased 9×13 inch (or 7x11 inch, if you like taller bars) pan and bake for 18-20 minutes until light golden brown. 

*I've done all chocolate chips, half chocolate/half butterscotch, chocolate mint chips, dark chocolate chips, etc. and they've all turned out awesome. You could add nuts too, if you are so inclined (I'm not).

  1. As I was eating my salad today, I was thinking about exactly THIS. I think it's good to keep a balance between eating healthy and being a HUMAN BEING.

    I have a few friends who are ridiculously healthy. Like so much so, it gets annoying. And thats all fine a good for them and whatnot, but letting yourself eat something you want to every once in a while at least is so much greater. I think it adds some realness. We're not all healthy freaks who never eat sweets!

    I made these last night to take over to someone's house they were a real hit.

    I knew I was destined to make them when I looked at the recipe you had linked from and saw one of the comments had described them as 'the lazy sloth's cookie"

    perfect.

    my husband keeps referring to them as brownies...I must deprive him of baked goods.
